  • Shrove Tuesday - Pancake Recipe Time!

For those interested here is an Irish Recipe I found for Ash Wednesday Eve PANCAKE SUPPER!!! Yum!! Anyone need some great Canadian Maple Syrup?!!

    SHROVE TUESDAY PANCAKES
Eggs and fat were once forbidden during the 40-day Lenten fast, so on Shrove Tuesday, the day before Lent, Irish bakers would make pancakes to use up their stores of those ingredients.
    4 large eggs
1 cup milk (do not use low-fat or nonfat)
    1 tablespoon butter, melted
    1 tablespoon sugar
    1 teaspoon vanilla, extract
    1/2 teaspoon salt
    1 cup all purpose flour
    Additional melted butter

    Powdered sugar
    Fresh lemon juice

    Preheat oven to 350

I'll give this recipe to my husband. He is a WONDERFUL cook but there is one thing he has never been able to make and that's pancakes. He loves to cook but pancakes fail him every time. lol He's the type of cook that watches you when you eat to see how you like it. There isn't anything he makes I don't like but his pancakes. They come out so dry and c-c-c-cakelike. lol My son will find me and say, "MOM! Dad's trying pancakes again!" So, I finally had to be honest. I tried to eat them last time he made them but you have to have to have a glass of milk with each bite. He was a good sport about it and laughed. The rule is, if he ever makes pancakes again, he has to eat a whole one before he makes us take one bite. lol
