I got a speeding ticket in June and was wondering how strict Fire and EMS agencies are when it comes to your driving record. I had it fixed but it now shows up on Missouri Casenet as "Exceeded Posted Speed Limit 1-5 MPH," it was originally 6-10 MPH. Is 1-5 MPH over a non points violation in MO?

The specific answer will have to come from any Fire/EMS agency you apply to. Many LE.Fire/EMS agencies have a policy which says: "Any pattern of conduct which evidences a pattern of disregard or disrepect for the law". What that's designed to do, is eliminate, or Disqualify a candidate who's criminal history, or driving history fits that description. Your one citation won't fall within that catagory. That said, dont' make getting them a habit.Again, for a specific answer, you'll need to check with a specific agency.

I don't see a single citation being a killer.

A traffic ticket or two every few years is not a killer. A history of bad driving is a problem.
